This is actually a recipe for 9-12 month olds so for a toddler might only split to 4-6 servings. This is currently the only way I manage to get red meat into my DS.
BABY BOLOGNESE
150G lean beef mince
1 small onion, peeled and finely chopped
75g button mushrooms, wiped and sliced
200g carrot, peeled and diced
150g zucchini, diced
large pinch dried marjoram
oil for frying
600ml salt reduced chicken stock
2 teaspoon tomato paste (optional)
Fry the meat and onion in a saucepan with a tablespoon of oil till browned.
Add the veggies and stirfy for a couple of minutes.
Add the marjoram and stock, cover and bring to the boil. Reduce heat and simmer for 30 minutes, stirring occasionally, until beef and veggies are tender.
If using tomato paste, mix in towards the end as sauce is reaching the desired consistency.
Suitable for freezing.
DH always scoffs the leftovers of this one!
