How many carb grams do you try to stick to in a day, I read 20g in a few spots, does that sound right?
Also, what do we think about boiled peanuts? You know the salty wet ones you get in the fruit and veg section?

I am usually 20gm or under of carbs.
Re peanuts, I'm not familiar with the boiled ones?? I generally don't eat them because they are legumes and I'm steering clear for the moment. Occasionally I will have a smidge of peanut butter though.
Ah, well they are a love em or hate em kind of thing - they are very moreish so probably best for me to steer clear of anyway!
So as far as nuts go, tree nuts are good, legumes are not?
I just seem to be getting no where now I've restarted. The only difference being that I've added in the flaxmeal crackers, which I have for lunch every second day, grain free granola which is brekky every 2nd day and I also made some casheroos which I think I should avoid for a while as they are too yummy!
Af is also here so I hope to have a breakthrough once she makes herself absent - I ate chocolate yesterday, she made me do it!!
I have posted a chart on my page which may interest you. Casheroos are pretty high in carbs (relatively speaking) so I don't have more than I small piece a day when I have it.
I'm stalling a bit too, for the same reason (still a few days away but retaining water like no one's business :( ) But I am sticking with it and hopefully will see the payoff in a week or so.
Just had a look at the table, it says 1 ounce. So what is the carb breakdown in the table in? Grams still? Must google grams in an ounce as I don't do imperial!
Eta so about 30 grams = 1 ounce.
Should I be looking at the net carbs, does the fibre counteract (if you like) some of the carbs then?

Just made a low carb choc mug cake and it was really yum!! I did use a sugar substitute which N2L I know you don't like, but I was really craving a sweet treat....not sure what you can use to sweeten that's low carb otherwise (suggestions?). I was really surprised at how fluffy this was and cake like without any flour!
Ingredients
1 egg - beaten
1/2 tsp vanilla extract (optional)
1 tbsp heavy cream
2 tbsp cocoa powder
2 tablespoons sugar
1/4 tsp baking powder
1 tsp oil
Directions
Split the oil between two tall mugs with vertical walls, and then use your finger to spread it evenly up the sides, drain any excess oil. The mugs must be very well oiled or the cake will stick when you try and unmold it.
Add the sugar to a small bowl, and then sift in the coco powder (a tea strainer works great for this). Add the heavy cream, egg and optional vanilla and whisk until there are no lumps. Sprinkle the baking powder on top and quickly mix together.
Split the batter between the mugs and firmly tap the mugs on a towel-lined countertop to release any large air bubbles. Microwave one cake at a time.
Since you don’t want to start and stop the microwave a bunch of times, set it for about 30 seconds, and closely watch the cake. It’s done when the cake rises about half-way up to sides of the mug (about 18 seconds in a 1000 watt microwave). The difference between a tender fluffy cake draped in velvety chocolate sauce and a chewy hockey puck is a few seconds, so you'll need to experiment to see what works best for your microwave.
Because the mug retains heat, it will continue cooking until you unmold it, so have a plate ready and unmold the cake as soon as it comes out of the microwave.
I didn't do all the fancy pants steps he did either, just chucked it in a bowl and mixed it up!

I have loosened my tight anti sweetener stance :D Still don't do artificial though.
I have tried erythritol , which is good in terms of effect (or non effect) on body. It's a sugar alcohol but has no carbs and does not cause an insulin spike. I found it has a cooling effect in the mouth (like a sugar free mint). Apparently though, if you mix it with stevia (google ratios) the cooling taste doesn't occur.
I have also tried Norbu sweetener. It is really good but expensive at $8 a small tin. It is made from monk fruit and erythritol.
My preference is rice malt syrup and coconut sugar but, in carb terms, sometimes I just can't "afford" them.
By the way....how are you finding it Ausgirl? Are you dabbling? Or going the whole hog? :lol:
Dabbling as in eating some things not allowed? Yes! I had a few terrible days while af was here! I had a function to go to and had to 'take a plate' so ended up buying those delicious packet mix scones which have 2 packs. I made u one and ended up making a little batch out of the remaining pack for 3 days in a row!
The last 3 days have been fine, I've not had anything 'wrong'. Today when I was craving something sweet, I stood strong and googled instead of buying chocolate!
While af was here I jumped nearly 4kg (and probably the scones as well) but now she's gone, I've dropped those already.
As far as how I find it compared to other diets, it's soooo much easier as I am full, and not starving like usual! Today I had bacon and scrambled eggs (made with cream) for brekky, I wasn't hungry for lunch until after 1pm, (usually famished by 10.30), I had pumpkin soup and flaxseed foccacia for lunch and a little piece of casheroo (made a new batch with less cashews and added maccadamias as they are lower carb/higher fibre). At 5pm I was peckish so had a chunk of cheese (love cheese) then dinner was beef curry with cauliflower rice and the chocolate pudding.
That's not a whole lot of food for a day really, but it's rich, filling food!
I am on holidays at the moment (back Monday) so have had more time to cook, etc. I have made a few big batches of good stuff for lunches/dinners.
Make some fat bombs for the choc cravings.

These little treats are designed to get more coconut oil and/or fat into your diet. You can vary the recipe, but here's what I came up with today.
20gms 85% chocolate
1 tbsp natural peanut butter (no salt/sugar)
3 tbsp coconut oil
40gm mini tub Philly cream cheese (original)
Teaspoon organic vanilla extract
Teaspoon cocoa
Melt chocolate, peanut butter, coconut oil. Add cream cheese, stir until smooth. Add vanilla and cocoa. Stir until smooth. Place in silicone moulds. Refrigerate.
I got nine out of this recipe.
Each of them are 99 calories, 10gms fat, 1.3gm protein, 1gm carb, 0.2 grams fibre. (Multiply by 9 to get macros for entire recipe.
91% of the calories are from fat, 5% from protein, 4% from carbs and 0% from alcohol.
High N2L can I pick your brains yet again?! I got some keto diasticks in the mail today (pharmacy online). What kind of level am I looking at if I am in ketosis? Is there a better time of day to measure?

Bought myself one of those peelers and made a delicious pretend pasta using zucchini and carrot - with onion, avocado, tomato sauce and leftover corned beef (from the slow cooker yesterday :) ) in cubes as the sauce - it was yummy - I used some macadamia oil and olive oil as well. Feeling okay about dinner tonight - plus leftovers for lunch tomorrow

I only used 1 tbs cocoa and 1 tbs Norbu sweetener. I also put a fat bomb in the middle. And I only made one from the recipe because I am a pig :lol:

My ketosis reading is 1.5, definitely not more so I guess I am not in keto, does that mean I won't lose weight?
1.5 is in ketosis. You will be losing weight :)
Got a strong reading of 4.0 this morning. Have taken off all of the holiday weight according to the scales! So down about 3.5kg again!

Doing so well! One thing I love about having a butcher partner is all the offcuts and bones lol.
Curious about some things, mostly how much extra time have you needed for this new way of eating? Is it getting faster now that you have a few recipes under your belt? How often is your family eating different things vs same things?

I definitely have to be more organised. I can't just grab a snack/lunch at the bakery, etc like I used to (I have a french bakery next to me at work where I used to get lunch). But things like flax bread/pancakes, etc take no time at all to make (5mins prep). I make a double batch of fat bombs, cookies/cake (for DD and me) and soup on a weekend.
Sometimes I get annoyed that I have to make cauliflower rice/zoodles when I get home from work if we are having something that requires them, but it's not a big deal. (I make cauli rice and freeze individual batches but they always run out on a work day lol). We used to have to have takeaway once a week, now it's no so easy, which is annoying if I can't be stuffed, but I get over it. I still eat BBQ chicken so that's a good fallback.
I have always spent one day a weekend baking/cooking meals so it's not much different.
My DD will eat a lot of what I do. DP is more resistant. He will get there...I can be very persuasive (read: nagging) when I want ;)
Eta - my really exciting news for the day (for me anyway) is my mum and dad are now converts! My dad is MrCynical/Logical/Science Brain. He has read all of the books and has gone from being highly sceptical a couple of months ago to telling mum "We are changing the way we eat" just yesterday. He has a science degree and teaches biology (he also has cholesterol and blood pressure issues) so I thought he'd be a hard nut to crack, but he has come around after reading the studies. I'm really glad :) (It's also validation for me, who doesn't have a science brain, that the science behind it all is sound.
BBQ chook is my 'take away' also. And now I can eat the skin!!!!
Similar to a keto cake but a little more indulgent and substantial....I made it for me while the others were having Donna Hay brownies. I think I won ;)
Chocolate brownie in a cup
Ingredients
2 Tbsp butter
3 Tbsp almond flour
1 tsp coconut flour
1 1/2 Tbsp granulated sugar substitute
1/4 tsp vanilla
pinch of salt
1 egg
1 Tbsp unsweetened cocoa powder
1/2 tsp baking powder
1 square Lindt 90% chocolate, chopped
2 Tbsp pecans, chopped (optional)
Instructions
Melt the butter in a small microwave safe bowl (about 30 seconds in microwave). Add the remaining ingredients and stir until combined. Pour batter into 2 small greased mugs or ramekins. Microwave for 1 minute. (add another 30 seconds if necessary). Serve with whipped cream or sugar free vanilla ice cream.
Notes
Approximate nutrition info per mug: 230 calories, 23g fat, 3g net carbs, 6g protein
Eta - I left out the nuts so macros would be less.

Hi N2L, yes still going, af is on her way so the scales went up this morning. Yesterday they were hovering on 77.9kg which is over 5kg down!
I have been suffering with dry mouth which apparantly is a ketosis symptom - just feels 'sticky' all the time and need to be constantly drinking water - suggestions?
Also been having a bit of trouble sleeping which can be a symptom too.
I went to PD day on Saturday and the nutrition section was all about limiting carbs, eating good fats, etc. I have been telling a work mate who'd noticed the weight loss what I was doing and she was, wow, that's exactly all the stuff you've told me!

Going Against the Grain
My attempt at Oopsie bread... this recipe....
is it supposed to taste so eggy??
Oopsies
6–8 depending on size.
3 eggs
100 grams (3.5 ounces) of cream cheese
a pinch of salt
½ tablespoon fiberhusk / psyllium seed husks (can be excluded)
½ teaspoon baking powder (can be excluded)
Separate the eggs, with the egg whites in one bowl and the egg yolks in another.
Whip the egg whites together with the salt until very stiff. You should be able to turn the bowl over without the egg whites moving.
Mix the egg yolks and the cream cheese well. If you choose, add the psyllium seed husk and baking powder (this makes the Oopsie more bread-like).
Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites.
Put 6 large or 8 smaller oopsies on a baking tray.
Bake in the middle of the oven at 150° C (300° F) for about 25 minutes – until they turn golden.
You can eat Oopsies as bread or use them as a bun for a hotdog or hamburger. You can also put different kinds of seeds on them before baking them, for instance poppy, sesame or sunflower seeds. One big Oopsie can be used for a swiss roll: Add a generous layer of whipped cream and some berries. Enjoy.
Yeah, they are pretty eggie. Not my favourite low carb bread, but they are ok. They are better when you put toppings on.
I actually liked mine with raspberries and cream!
I like the bread rolls I made recently. And the flax bread.
I think I preferred the flax bread.... But that was a bit bland without cheese :) I might give something else a go next weekend :)
I have no idea whether this diet has anything to do with it, but I've just had an almost 100% pain free, bloating free period. That hasn't happened for a long time!
Down another kg too!
It is the diet 100%. I had a month early on where I ate low fat and high carb (basically I just forgot to eat like I normally do and existed on mostly fruit) and I had a painful period again. It was weird! It made me make sure to eat more fat again and I haven't had cramps since. My period arrives with no warning and apart from the blood I wouldn't even notice it's happening.
I did still have the customary pre warning back aches and a little bit of cramping first evening. But for a woman with endo, that's a miracle! Normal period in recent months has been pain day one, sleepless night in agony, agony day 2, sleepless night and then tenderness and bloating for day 3 and 4.
Weird thing is the natropath (who charged a small fortune) told me it was dairy that did it, I've eaten a truck load of dairy in the last month!
Omg ausgirl..... I just made your mug cake.... Freaking awesome....! But I couldn't eat it all (as DH didn't want one, I tried to eat both... Couldn't... Probably a good thing. Lol
Well I have hit 76 kg for the first time in years! I am in a pair of jeans that I haven't been able to fit into for a long time today! 6.1kg loss so far! Thing is, while I am eating high fat, low carb most of the time, there have been a few weekends where I haven't and still I continue to lose! I love this.

Thought I should check in with everyone, I've been a bit preoccupied lately with other things ;) so haven't been on here a lot. How's everyone doing? My body seems to have turned into a weight loss machine, I had a really bad eating weekend, read lots of carbs 2 weeks ago, yet the scales have gone down another 700g anyway. It's probably slowed a bit, but it's not going up!
I don't crave sugar anymore, ever. My only downside is my tongue feels a bit dodgy and the dry mouth thing is still there a bit, though not as bad as previously mentioned.
I've been trying on clothes that were tight as or I couldn't get into last season and they are loose, I am loving the thought of going into summer thinner rather than fatter after winter for a change.

Hi there LCHFers, I have been thinking about moving towards this way of eating for a while. I am not LCHF yet, but have been consciously cutting back on carbs mostly. I already generally don't eat sugar/fructose.
I am hoping that you all can help me out by posting what you eat each day. There is plenty of info about what you can/can't eat, but what I am after is an actual list of what you actually ate on a given day. Just to give me some ideas and a real life example. TIA
