Vegetable Fajita
1 medium onion
3 whole capsicum
1 clove garlic
225 g mushroom
90 ml Olive Oil
2 tsp chilli powder
1 serve corn tortilla
Slice onion. Cut the capsicum in half, deseed and cut into strips. Place in bowl and add garlic. Remove mushroom stalks and slice mushroom cups. Place into bowl. Add oil and chilli powder and mix.
Heat a pan, add vegetables and stir fry for 5-6 minutes. Spoon a little of the filling onto each tortilla and roll up.
Garnishes can include, sour cream, guacamole, salsa, grated cheese.
