Just thought I would share an easy recipe for gluten free Blue berry Friand which the whole family love. I use a 24 hole mini muffin tin as they are then a perfect size for little hands.

Blueberry Friands

4 large egg whites
100g butter melted (I use Nuttelex) to make dairy free
1 cup pure icing sugar
2/3 cup compacted almond meal
1/4cup + 2.5teaspoons of gluten free all purpose flour (I use Orgran)
Punnet of blueberries

Preheat oven to 190 degrees. Grease 24 hole mini muffin tin
Beat egg whites until frothy (about 30secs). Melt butter and set aside. Sift icing sugar, almond meal and flour into the egg mixture. Mix until just combined. Add butter and mix until just combined. Spoon into greased mini muffin tin. Top with 2-3 blueberries. Bake for 12-15mins. Let sit in tin for 5mins. Cool on wire rack and dust with icing sugar if desired.
These are yummo and won't last long!
