There's a meatloaf recipe in one of the recent food mags. I am going to make it soon. It is topped with pine nuts and sounds awesome.
Mushroom meatloaf
1/3 cup pine nuts
1 tbs olive oil1350g cup mushrooms, finely chopped
1 small brown onion grated
1 garlic clove crushed
800g beef mince
1/3 cup tomato chutney
1 egg, lightly whisked (Im goingto attempt without egg....)
2cups fresh white breadcrumbs
1/2 cup basil leaves chopped
1/2 cup grated tasty cheese.
Cook mushroom, add onion, and garlic. set aside to cool for 10 mins.
combine mince, tomato chutney, egg, breadcrumbs, basil, cheese and mushy mixture in large bowl. Season with salt and petter. Mixx well and put in loaf pan. Press pine nuts into top. Bake 40-45mins in 180 degree oven.

I realise this is very late and not at all relevant anymore really but i thought i would add that when i make meatloaf i spoon half the mixture into a meatloaf dish and then do a layer of spinach leaves (quite thick as it will reduce once cooked) then put the rest of the meatloaf mixture on top then i press in cherry tomatoes over the top (about nine) so that about half of the tomato pokes out the top then bake - it slices up really nice with the layer of green spinach through the middle and the tomatoes give a nice burst in your mouth!
