So my friend is organising her menu for Passover on Friday night. She is serving a warm chicken broth with wantons and a niciose salad (cold tuna salad I believe). Which should she serve first? Warm soup? Or cold salad?

For the Shulchan orech you can eat pretty much what you want, so it would be personal preference as to chicken/fish or fish/chicken. I'd be inclined to do the warm first, only because of logistics involved in it.
Soup is usually served before salad.
ETA, yes OP, the Nicoise is a tuna salad, traditionally with (cut up) hard boiled eggs, boiled potatoes, sliced tomatoes, green beans, green salad leaves, topped with nicoise olives, tuna, and anchovies. They vary though. Enjoy.

Um for passover i wouldnt think you would be having beans or wantons? (or is it more of a festive meal than traditional)
I have 35 people coming - our courses are:
Egg and salt water
Soup
Chopped liver
Fish
Main meal
Dessert
(plus all the bits and pieces before).
