some kind of nut - maybe macadamia - crushed up with garlic, fennel seed, sea salt and rosemary. Serve it with a cabbage and apple braise.
I'm not sure I would bother stuffing it - just score the skin and rub in a mixture of salt, pepper, ground fennel seeds and chilli.
One of my fave recipes for pork stuffing is for pork chops but it would be good in a roast too. Its pancetta, pork sausage mince, apricot and hazelnut I think.. or was it macadamia... and sage I can't remember I think it was a Jamie recipe... very yummy!
