Using frozen spinach
Bought some frozen spinach yesterday as I'm going to make spinach & ricotta cannelloni for dinner tonight (fingers crossed it tastes ok and doesn't kill anyone!).
Should I cook the spinach first (as it's currently frozen) as per the packet directions, or just thaw it out before mixing it with the ricotta cheese to stuff the cannelloni? Reading the recipe on the back of the cannelloni box it seems like they just used fresh spinach.
I've never used frozen spinach before, nor made cannelloni, so hopefully it will work out. Can't be too hard surely.. :p

I don't pre-cook the spinach when I make cannelloni (I use fresh though) so I would just defrost and use.

I would probably defrost it first (so that it's easier to mix into the ricotta), but no need to pre-cook anyway. It usually cooks in a few seconds (it's not like it's meat), so once it's in the oven in the cannelloni it will cook enough.

I keep some frozen spinach for emergencies.
I cook it before use because I always drag it our for last minute use. If you're thinking ahead you could probably just thaw it.
