Hit me with your best stuffed Chicken Breast recipe!

Tonight I want to do something simple and easy, that doesn't need lots of management during the cooking stage. So we're having Faux-tatoes (my pureed cauliflower recipe) and baked broccoli (if you haven't tried it DO IT, its awesome as is baked asparagus and cauliflower!). So I want something that will match those flavours. No bread crumbs please, and no italian flavours... something cheesy would be great! And we're not adverse to bacon ;) I was thinking of doing a cream cheese & bacon filling with onion and garlic but if someone has something more adventurous I'm all ears (or maybe its eyes!)

i dont think cheese will go well but sometimes i stuff my chicken with prunes and bacon.

Just saute off some chopped onions, garlic and bacon and let it cool. Then i mix in about 8 chopped prunes and whatever herbs i have like parsley or thyme or just S&P. Stuff and bake - yumm

Not sure if that's italian or not (hope not lol)

This is by no means healthy but:

Firstly I fry up some bacon that I have cut into little strips so the bacon is cooked.

Then I create a pocket from the fat end of the breast as far down as I can get the knife without piercing through to the outside.

then I get some garlic butter and work that inside the breast followed by some grated cheese and bacon and just keep repeating the bacon, cheese and garlic butter until its really stuffed.

I use toothpicks kind of sewn through the fat end of the breast to close it up then I make an egg wash and coat the breast in the wash and roll in crumbs.

Depending on how I decide to cook the chicken I either pan fry or oven bake the chicken until its cooked. I prefer to pan fry because some of the garlic butter oozes out so it kind of cooks in it as well (I use small pans).

Its lovely and rich but none too healthy :lol: just thinking you could probably add some crumbs inside as well which would soak up the juices nicely.

omg, i feel so stooopid! I thought you meant you wanted a recipe to stuff a whole chicken :doh:

Well in that case i have stuffed a chicken breast with cheese, similar to NaeNae's

You could also flatten out the chicken breast and lay a piece of blanched asparagus across the middle with some riccotta or swiss or what ever cheese you have, roll up and wrap bacon around the outside. Pan fry then finish in the oven.

You could still use the prune recipe too :)

Sorry I just read about the no bread crumbs

Its just as lovely without t he crumbs too oohhh you could do a cheese sauce over it to add to the cheesiness of the dish hmmmmmm I might try that out on DH he loves his cheese.

Cooking Time

20 minutes
Ingredients (serves 4)

• 60g butter, at room temperature
• 1 garlic clove, crushed
• 2 tbs finely shredded fresh basil
• 4 (about 200g each) single chicken breast fillets
• 25g (1/4 cup) dried (packaged) breadcrumbs
• 1 tbs olive oil

Method

1. Preheat oven to 180?C. Place the butter, garlic and basil in a small bowl, and stir to combine. Use a small sharp knife to cut a horizontal slit in the thickest part of each chicken breast to create a pocket. Divide the butter mixture into 4 equal portions. Spread each chicken pocket with a portion of butter mixture.
2. Place the breadcrumbs on a plate. Dip the chicken into the breadcrumbs, pressing firmly to coat. Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 2-3 minutes each side or until golden. Transfer to a baking tray. Bake in preheated oven for 10 minutes or until cooked through.

I know you said no breadcrumbs ... they can be easily left off =)

ok i know u said u want something easy, so maybe keep this one for when u have the time to prep.
i use Camembert cheese and tasty bout a cup of each, grated.(have used gouda successfuly too, DF thinks camembert is to strong for him
100gms spinach which i pan fry in butter and nutmeg until wilted
Bacon, procuitto, panceta, whichever takes ur fancy, cut into strips and fried
Bread crumbs
Mushrooms.
No real measurements, made this one up myself, any left over fillling i freeze for next time
Mush it all together, cut a hole in ur chicken breast, shove in as much as you can.
Pan fry to seal then stick it in the oven for about 40mins-ish!

brie/camembert with cranberry jelly

When I am after something quick and easy I stuff my chicken breasts with grated cheese, baby spinach leaves and whatever cold meats I have in the fridge eg ham or prosicutto. If I have sundried tomatoes they get put in as well. Throw them on a baking tray and sprinkle with some Tuscan seasoning and voila yummy!:D

I stuff chicken breasts with camembert then wrap with bacon, trying to cover the slit as much as possible. bake at 180 for around 35mins (depends on your oven).
Meanwhile I make a sauce with chopped sun-dried tomatoes or sun dried tomato pesto. Fry off the s/d tomato in it's own oil with a few cloves of garlic and some shallots. Add some lite cream right at the end. This is delicious!!!
