hmmm, i guess you could, but i wouldn't. In some recipes i would say no prob, but a lot of the flavour of the garlic cream sauce would come from the wine, so if it was me, i'd use a yummy white wine.
I guess if you love the taste of rice wine it wouldn't be an issue. ;)

Well i would probably use a wine i wanted to drink so i could have the rest of the bottle with dinner. :) So, your best bet would be to ask your local wine merchant. You don't need to spend a lot to get a good wine, but having someone who knows their products is helpful.
I would probably go for a sauvignon blanc. but you might prefer something a little sweeter. :dunno:
