I have some pork chops (forequarter chops, I think) in the freezer and I'm not sure what to do with them. Usually I bake them up with some slices potatoes and apples, but I'm pretty sick of that.

I usually coat them in Dijon Mustard, sprinkle some salt, pepper and chilli flakes on them, and then fry for a couple of minutes on both side. I then add 1/4 cup on maple syrup to the pan, a cut up onion and a couple of bayleaves, and transfer the whole thing to the over for 20 minutes.
The syrup give the chops a sticky coating and they are just yummo! I usually serve them with mash potato and vegies.
