yummy couscous recipes?

I would really love a scrummy yummy couscous recipe to cook tonight?
im cooking for my mum tonight as shes been going through a tough time atm and she loves couscous so i if anyone has any recipes ??

I was thinking about cous cous just before actually. I fry up sliced mushrooms, add some baby spinach leaves, cover and sweat the leaves, then combine with prepared cous cous. I'm the only one here that eats it though.

orange juice, sultana and nuts ( almond or pine)
or lemon/ basil
pumpkin adn sage.

Obviously too late but I like roast veg and chorizo cous cous.

Grill 2 chorizo sausages in a grill pan and set aside.
Meanwhile bake 1 cubed potato, some cubed sweet potato, cubed pumpkin, cubed carrot and some halved mushrooms for around 35mins or until done.

Cook cous cous and place in bowl with other ingredients. Add some crumbled fetta, 2 handfuls of baby spinach or rocket and a drizzle of balsamic vinager and olive oil. Yummo.
