Cold noodle salad

Just wondering if anyone knows any recipes for a nice cold noodle salad using hokkien noodles? Preferrably without carrot. My sister is really picky when it comes to what she'll eat (even worse than me!) and my mum is worried that there won't be much that she'll enjoy on Christmas day. I think she might eat a noodle salad though...

It would be especially great if someone knows a recipe that includes zucchini and broccoli because they have grown crazily in our garden and we have lots!
