2 limes
2 chillies, halved, deseeded, finely chopped
2 garlic cloves, crushed
60ml (1/4 cup) light olive oil
1/2 cup fresh coriander leaves, chopped
1/4 cup fresh mint leaves, chopped
whizz it all in a blender and marinate chicken skewers then BBQ
serve with tzatziki or greek yoghurt as a dip
or how about berry and mint sorbet
1/2 cup caster sugar
1 1/2 cups water
3/4 mixed berrries
1/2 cup mint chopped
disolve sugar in water over heat. bring to boil, add berries and cook for couple minutes till soft.
remove heat and add mint and let cool completly. once cool strain through a sieve to remove berry seeds etc, pour into container and freeze overnight.
greek yoghurt, lemon juice, crushed garlic, chopped cucumber and mint leaves make a great tzatziki for grilled meats!
