I like to do a big cook up (and eat the proceeds the same day :redface:)...but this time I actually want to get some put away in the freezer.
I probably know this in the back of my addled brain but are there rules about what freezes well.
Cakes and muffins go ok don't they?
I've not met a cake or muffin that doesn't freeze well. Just make sure you snap freeze before bagging. I do this on a tray and then after 12 hours pop them in large zip lock bags and they don't stick together, and then you don't need to waste plastic wrap or bags.
Slices it depends I'll find some that I know are freezable for you :)
Yup Lulu, cakes and muffins freeze brilliantly, and defrost quickly too!! Biscuits too....although I freeze the dough in a sausage shape and then bake as I need it.
Mine never get that far (to the freezer) but Im looking to give it a go!
Is 12 hours in a normal freezer or a chest freezer (our bottom mounted freezer is -17.8C):

In an upright freezer. If you do it quickly it doesn't get freezer burn. Check out the book frost bite (there's also one for teens & kids) and it talks about snap freezing in a regular freezer. And hot it prevents the food from getting freezer burn as it can do in a bag. I have done it for less than 12 hours and it works fine too. She does it with all sorts of things from mini quiches, to cooked samosa's or even meatballs.
I've frozen iced cupcakes successfully, freeze uncovered at first like Cai said then I put mine into an ice cream container. Mine never last long enough in the freezer to get ice chips on them. :shakehead:
I've frozen buttercream and cream cheese icing okay.
uniced cupcakes are great - and they are much easier to ice when they are still frozen :)
I am yet to meet a muffin that didn't freeze well. I generally individually wrap them anyway because they are for lunches - but I have put whole trays in the freezer and then bagged them a couple of hours later (like Rouge suggested)
