I know cooking capsicum and tomatoes enhances some of their good stuff, and peeling fruit/veg can remove nutrients, so does stewing do anything other than make apples yummy? :D

I think a bit will leach out into the cooking water. I found stewing them made some things too mushy so I'd always steam them and then use the water to get the consistency right.
You can also use the cooking water for other things too so that it's not wasted nutrients. Freeze it into ice cube trays and use it to flavour porrige for fruit or for vegies into mashed potato or cheese sauce :)
Not sure about stewing, but I do know that when apples are peeled, you loose alot of the goodness. Unless you eat the peel. :)
