Ok, my latest little fave thing to take to bbq type parties when people say not to bring anything is Oreo balls, I put a beat a block of phili cheese with a blended pack of oreo cream biscuits and roll into balls then coat them in chocolate. But what I want to know is - how do I do this neatly?? Like truffles and stuff? Mine are always so messy and I know I'm not doing it right or something... Please help make my Choc oreo balls look as good as they taste!
I've never made them before....but I do have a block of phili in the fridge....

What chocolate are you using on the outside? Do you grate it? O r are you dipping them in melted chocolate?
I'd wet my hands a little perhaps before rolling?

Make them smaller than a tablespoon size. The bigger they are the gloopier they tend to look. I use a clicky (melon ball sized) ice cream scoop for truffles and this works perfectly (you can buy them online from catering suppliers). And try and temper your chocolate before dipping. I also find using a fork (don't skewer it though) if you don't have a chocolate truffle dipper, but I tend not to skewer with toothpicks or skewers and dip because I tend to lose the truffle in the chocolate LOL!
i've found when making truffles that i have to keep my hands at just the right temp to roll them well if i'm doing it by hand - over xmas this meant washing my hands in cool water quite a bit.
i also love my truffle dipper. the finish looks pretty good & it's less messy for me. it was really cheap as well from a homewares shop - less than $5 from memory.
Thanks Ladies, I got tied up lastnight and a bit slow to get going today :p Thanks for the tips. I usually make the mixture - put it in the fridge to make it a bit stiffer, then roll the balls, but them on a tray of baking paper - sometimes fridge them again before dipping them in melted chocolate. I think the tool is what I need! WIll have to get one when I got to Perth next week woot!!
LimeSlice: I used Cadbury Dairy Milk block - melted this time. Have used Nestle cooking melts too. Not sure which is better though.
For those making them, they're quite rich, and I like them best when they're fresh from the fridge, nice and cold ;)
I was just going to suggest to make them squares, not balls. Press the mixture into a lined lamington or slice tin, chill until firm, then turn out and cut into even squares. Roll in cocoa/drinking chocolate/etc. Something different anyway.
I don't like making truffles as I find them so time consuming! But they are yummy!
