Hi, I was wondering if anyone has any recipes for sugar-free cupcakes? I'm thinking maybe banana or apple so that they are still sweet-ish and tasty. Or even a banana recipe and an apple recipe...
They'll be for DS's 1st birthday and I thought that at least if they are sugar-free then he'll be able to have some too :D
I have a banana muffin recipe that would make an excellent cupcake, it can be made with Splenda (the original recipe calls for splenda - but I use sugar). Will post later!
Forgot to ask is your son diabetic, or are you just adverse to sugar? As the recipe I have is actually a diabetic friendly recipe.

90g of butter
2 ripe bananas
1 egg beaten
90ml of milk
1tbsp of honey
200g of SR flour
1/4 tsp pf bi carb soda
90g of sultanas
cream butter and banana in a bowl, gradually add the egg, milk, honey, flour and bi carb soda, stir in sultanas, devide into patty cases and bake for 15 mins
decorate with banana slices
FOR PEAR CUPCAKES
as above but substitute a mashed pear for one of the bananas.
FOR STRAWBERRY CUPCAKES
as above but substitute four mashed strawberries for one of the bananas
Ive made these, they can be a little bland but maybe experiment with them first!!
Mmmmmm, now I'm hungry for cupcakes!
Rouge, DS isn't diabetic, I just haven't really given him anything sugary yet, and I'm not sure if the other kids' parents would be happy to give sugary cakes to their littlies yet either.
Olive, those cupcakes sound delicious. I'm going to have to get the ingredients and do a trial run (that I will have to taste test thoroughly of course!). Is honey ok to give to youngens if it's been cooked? I know the worry is with botulism, but that would be killed during the cooking process surely.
Oh, and I wonder if you can use something instead of egg. I'm not sure how many of the parents have tried egg with their kids yet either. I'm sure there's some alternative to egg...
