So, hit me with your favourite way to cook fish.
Don't know if you were after something a bit fancier, but my fave way to do fish. You can do it on the BBQ or in the over, both work well. I do it in the oven.
Pumpkins Fish in a Bag
Whatever fish you are using, rub in olive oil, salt and set aside. Get a nice square of foil, big enough to fold and close over the fish to make a parcel. Put a pile of baby spinach I. The middle of the foil, place fish on top. Sauté some onion and garlic (I do my garlic with the skin all still on, until it gets so soft and yummy it just falls out) in a bit of butter. Add the onion and garlic to the fish. Halve some cherry tomatos and place on and around fish. Add some basil, a nob of butter on top, and cook at about 180 degrees for 20 to 30 mins. I sometimes also add a bit of pasta sauce from a jar. It's such a yummy dish because when you take it out, all the juices have combined and cooked the fish really well. I do a similar version but asian inspired, and I use julienned carrot, spring onion, ginger and garlic and a splosh of soy and some sesame oil. I also use a piece of parchment (baking paper) in between the foil and fish because cooking on straight Aluminium is said in some circles to not be good for you and it doesn't stick. Otherwise Leeks, Slice Lemon, Garlic and Dill are also good parcel ingredients. With a splosh of white wine and some dots of butter.
A good splosh of cider can be nice, especially with fennel or dill.
Oh PZ that sounds yummy, but I can't get any spinach :( Weekly food truck doesn't come til tomorrow so the shop is looking grim.

I do a really quick and easy parmesan crumbed fish. DS loves it (so does DH ;) ). Put some seasoned flour on one plate, a whisked egg on another plate, and a pile of grated parmesan on another plate. Take your fish fillets, dip it in the flour, then the egg, then the cheese and pan fry or bbq for a few minutes each side until cooked through. I usually have a salad or homemade chips with this one.
Otherwise my other fish dishes are usually seafood paella or risotto.
We also do an awesome baked fish which is made with mushrooms, tinned tomatoes, cream onions, brandy/sherry (or white wine) and thyme. Baked in the oven and served on angel hair pasta. If you want the recipe it's around here somewhere...
