so i have a bunch of corriander and i want to make something that uses up some, what can i make??
Won tons!! Minced chicken or pork or prawn, some finely chopped Ginger and garlic, some finely chopped veg if you could be bothered and finely chopped coriander. Mix well and add a little egg if you want to bind it better, then wrap in wonton skins (which I notice are now available in supermarkets!!). Boil and have with noodle soup. Even Maggi 2 min noodles are ok with this.
Or marinade some nice beef with garlic, sweet soy, sesame oil and sambal oelek. Cook the beef and serve with rice, topped with freshly chopped coriander and cashew. I have a more complicated and tasy recipe similar to this, but this will do in a bind. Will post the better one when I'm not typing on my phone ;)

Yum I am a coriander fiend...we go through a bunch a week!
Green chicken curry...you can cheat and use the paste out of the jar and add some chopped coriander stirred in just before its done. Or a stir fry with red chilli, lemongrass, ginger, garlic and coriander. Maybe I'm just weird but I put it in a chicken sandwich the other day too...with tomato and red onion, it was really good!

Dahl soup - it's a really easy to pull together store cupboard recipe. I'm on iPhone while bf at the moment, but I can check the recipe next time I go downstairs and post it if you fancy it?
I looooove coriander! But I can't remember what I have it in. Salads, just chuck it on dishes, mmm with yoghurt or sour cream....

i had pumpkin soup with corriander for lunch, a few nibbles straight from the bunch all day, now were having buttter chicken so i will cover that with corriander as well!
do a little coriander and cashew dip - just blend up corri, cashews, a chilli, and some olive oil. Yoghurt might be nice too, if you do yoghurt.
A Thai style salad - heaps of corri leaves, grated carrot, maybe some cabbage, cashews, shredded tofu (chicken, for you omnis!) capsicum slivers, a little bit of chilli and some crispy noodles. Dress with a limey-fish saucey-oily concoction, and you're away.

Ooops, I was munching some dahl soup tonight and remembered that I didn't ever come back with this! here it is, better late than never, huh ;P
2 tbspn butter
2 cloves crushed garlic
1 tsp grated ginger
1 chopped onion
1/2 tsp turmeric
1 tsp garam masala
1/4 tsp chilli powder
1 tsp ground cumin
1kg canned chopped tomatoes
1 cup red lentils
2 tsp lemon juice
600ml vegetable or chicken stock
300ml coconut milk
1 bunch chopped coriander
Melt the butter, add garlic, ginger and onion and saute, stirring constantly, until onion is translucent but not brown
Add turmeric, garam masala, chilli powder & cumin and cook for 30 seconds to release the spices
Stir in tomatoes, red lentils, lemon juice, stock and coconut milk and bring to the boil
Reduce the heat and simmer uncovered for approx 30 mins until the lentils are tender
Add the coriander and season to taste
If you fancy a Malaysian twist to it you can use lime instead of lemon juice and add a tablespoon of peanut butter too
