So it's my sisters birthday today and I want to make her a DIVINE cake :)
Ever birthday she bakes everyone a special cake, it's usually delicious and a bit different... so I want to surprise her with the same back... problem is I don't have any recipes :redface:
If you were to make a special cake what is it?

I have always wanted to bake Nigella's chocolate guiness cake. I have eaten it before and it was devine. The recipe is on Nigella's site.

For devine you can't go past the chocolate mudcake recipe on the back of the cadbury milk cooking chocolate packet. I make it all the time and it's gorgeous. It makes a large cake too if you need to feed a few
I don't know how to add a word document, so I'm just gonna copy and paste for you. This cake sounds boring, but it suuuuper divine!! My inlaws even wanted to buy some of me to give to friends after they tried it. It is suuper moist and the cream is just yumm.... *drool*
Carrot Cake with White Chocolate Cream Cheese Icing
Ingredients
• 350g self-raising flour
• 2 tsp ground cinnamon
• 1/2 tsp ground cloves
• 1 tsp mixed spice
• 1/2 tsp ground nutmeg
• 1.5 tsp baking powder
• 375g soft brown sugar
• 270ml oil
• 200g greek yoghurt
• 4 eggs
• 400g grated carrot
• 1/2 cup chopped walnuts + whole ones for decoration at the end
Cream Icing
• 250g cream cheese, softened
• 80g icing sugar
• 100g melted white chocolate
• 1 tsp vanilla essence
Method
1. Preheat the oven to warm (175C). Brush a deep, 23cm round cake tin with melted butter or oil. Line the base and side with baking paper. Sift the flours, spices and bicarbonate of soda into a large bowl and make a well in the centre.
2. In another bowl whisk together the oil, sugar, greek yoghurt and eggs. Gradually stir into the dry ingredients until smooth. Stir in the carrot and walnuts. Spoon the mixture into the tin. Bake for 45-55 minutes, or until a skewer comes out clean when inserted into the centre. Cool for 45min in the tin, then on a wire rack.
3. Beat the cream cheese and icing sugar until smooth. Gradually add the white chocolate and vanilla, beating until light and creamy.
4. Cut cake into three layers. Spread Cream cheese Icing between layers. Cover whole cake with Cream Cheese Icing, Springle chopped walnuts around the outside, pipe rosettes on top of cake in a circle, Place half walnut on top of rosettes.

I normally make double the amount of cream (icing), so I can fill the layers. I also make little chocolate letters to write 'happy birthday soandso'. For that you just melt some dark chocolate, put it a freezer bag (zip lock bag), cut a TINY bit of one corner (I usually hold the bag like you would a piping bag) and then write 'Happy Birthday soandso" on BAKING PAPER, not on the cake!! That way you get a few tries! :D Then place the baking paper wÃ*th chocolate writing in the freezer to set. When you finished the cake, just take the letters out of the freezer (I usually try to pick the nicest ones out of my 6 or 7 tries) and lay them nicely on top of the cake!
And you are done!
