I've been searching for the perfect Rum Balls / Snow Balls recipe, and am yet to come across one.
I don't like the ones with fruit in them, so if you a recipe you'd like to share, I'd be very grateful!!
TIA, Nic

I have one that I love from my FC Christmas book I've had for years.
Melt 225g chopped dark choco, then remove from heat. Add 100g diced butter adn 2 tsp rum and beat til smooth. Beat in 175gs icinig sugar then refridgerate til firm. Shape into 2 teasppn balls with 2.5cm diamter. Finely chop slivered almonds and roll balls to coat. Serve in gold paper cases.
I actually cover mine in coconut! Mmm delish!
There is one for Rich orange truffles too if you want them!
I got a really yummy one from the recipezaar website (have a new name but google still finds it) made from packets of wafer biscuites. I coat mine in choc sprinkles and havn't yet lasted more than a day. Also, the longer ahead you make the mix, the stronger the rum flavour gets.
100grms butter chopped
150 grm dark choc chopped
2 cups icining sugar mix
2tbl rum
2TBL cocoa
pack marie bickies crucshed in a food processer
coconut
combine butter and choc over low heat til melted and smooth add 1 cup icing sugar mix thru then cover and cool
combine other ingredients except bickies add to the chilled mix then add bickies
roll and coat in coconut
these have a almost truffle like texture :)
Easy Peasy Ones...
1 PKT Milk Arrowroots (crushed)
4 heaped dessertspoons cocoa powder
1 tin condensed milk
Mix all together and roll into balls. Roll in coconut. Done. YUM
Mine is the same as Stoked, but I add between 1/4 cup and 1/2 cup of bundy rum depending on how strong you want them.
Yum! if you are pregnant can you use rum essence instead?
Fabulous... thanks heaps girls!!
Belle, I can't see why you couldn't just use essence...
