Soup is often a good one.
Omelette/scambled egg whilst watching the ingredients.
Hmm - having a blank will BBL if I find my brain again.....
Quiches??? The mini ones made in like a cupcake tray?
Some salad with some tuna mixed in & some vinegarette.
Salada crackers with tomato, cheese & ham?
Stuffed potatoes (if you can handle fiddling with making the 'well' - this bugs me NO end!)?
Baked beans on toast?
Tuna Mornay?
I'll BBL, I have dinner on the go!
xx
My fav:
1/3 cup natural yogurt
1/2 cup cottage cheese
a handful of berries.
sprinkle with sliced almonds
1. Lazy omlette: two eggs, a drop of water, one sliced tomato, and something else (some capsicum, a little ham, a spring onion, some parseley, a couple of olives, a bit of feta - whatever you have handy!) and nuke in the mocrowave for 1-2 mins (depending on your microwave strength)
2. Lazy steamer: one piece of fish or chicken, two handfuls of green (spinach, bok choy, cabbage, broccoli) and something red (tomato/capsicum) and microwave all together in a microwave steamer for 3 minutes.
3. Soup: simmer for an hour a big cauldron of stock, cabbage, capsicum, tinned tomato, carrot, corriander, celerey, garlic ... then put into meal sized tubs and freexe - then just defrost one each morning, and eat. If you find you get hungry, then steam a potato to go with. If you need some protein, chuck in some steamed chicken, a or a tin of salmon/tuna.
YUM!
I do the soup thing too & freeze it! So essentially it is a basic chicken stock then I add parmesan cheese and soup pasta - easy as!
Lentils, baby beetroots, sliced spring onion, some rocket and spinach, spoonful of crushed walnuts and some crumbled fetta = very YUMMO salad.
Or tuna, chickpeas, cherry tomatoes makes a nice salad as well.
I love turkey, swiss cheese and cranberry sauce wraps too.
Curried egg sangers.
Tuna, mixed salad with homemade sweet potato chips in the oven, I also have variations of this, such as instead of tuna I may toss some chicken breast in the fry pan with some mushrooms, red capo and red onion, maybe add some cajun or moroccan seasoning. Or instead of sweet potato chips i will have just homemade potato chips or a jacket potato.
If you want quick and easy a friend used to buy the steamfresh veggies and the 2min rice things, add in chicken or tuna (both in cans now)... mmmmmm
Left overs!! This has been my saviour since having DS2. I make an effort to have something left over from dinner to eat for lunch, usually spaghetti, stirfry's, crumbed chicken. Or I have been making a tuna salad- mix together some tuna, tinned corn, grated carrot, diced capsicum with a little low fat mayo and stir in some baby spinnach and lettuce. Yummeee!! And very healthy and filling.
Recently I brought the woman's weekly 21 day wonder diet book - and have been going through the meals in there for our normal meals and so far they have been great! I can post some of my faves up if you like - they are all very healthy and easy
As an off the top of my head suggest how about mountain bread wraps with deli meat and salad?
:bump:
I am really looking for some good lunch ideas for work....
I like to take couscous to work. I usually cheat and get the Ainsely one then add 8 cherry tomatoes (or 1 normal one) diced, 100g crumbled feta, 1/2 a lebanese cucumber. YUMMO! I'm the only one who eats it in my house so 1 sachet = 3-4 days worth of lunches! Sometimes I add grilled lamb to it which is super yummo!
I also make a rice noodle salad which I add stir fried chicken to. This lasts 2 days as DH loves it as well!
I make a snowpea stir fry as well (snowpeas, garlic, ginger, chili, cashews, soy, sherry) and add grilled chicken to it. YUMMO!
All are under 400 cal per serve.
I love half a cup of couscous cooked with lemon juice (gives a great tang!) then I just add loads of salad to it including sundried tomatoes and cheese YUM
I like to eat chicken sandwich and sometimes i prefer chicken pasta in my lunch as it is easily cooked and good food for lunch and i consider it as best food for the lunch.
I don't like to eat too much in my dinner so i eat simple food. Sometime i eat fruits only and sometime i like to eat pasta. Pasta is my favorite item in dinner.
