hamburgers? grate some carrot and zucchini into them for a bit of veg....
meatloaf? just like big hamburger really, but bake it in a loaf tin :)

stir fry with veggies and rice
I made a stir fry for Hubby the other night which was literally just cabbage, mince and keens curry powder. Was surprisingly delicious apparently.

Italian meatballs

Swedish Meatballs, ikea style ;) We're having these tonight. We use the taste recipe. And instead of frying them (because I hate the mess) I bake them and then deglaze the roasting pan with beef stock and use the stock to make the sauce. It's a family favourite, and goes really well with curly fries and cranberry sauce ;)
