I need some decent knives, any suggestions?

So I've finally cracked it and decided after 40 minutes of swearing (in my head) through cutting up 700grams of beef for my casserole that I need new knives. I was having that many issues getting through it that I stabbed my fingers twice and managed to mangle more than cube it.

I really want a set of decent quality, SHARP knives. The set I have are more dangerous with the amount of times I've slipped off lately and cut my fingers due to them being so blunt. I do enjoy cooking if the utensils cooperate :lol:

Does anyone have suggestions for a reputable brand that really works for them. I know there are quite a few kitchen goddesses that can answer for me :lol: I don't mind spending a bit of money on them because I know with knives it's better not to scrimp. It'd be an investment I can justify.

our furi knives are good!

crazylady - i recommend victorionox knives. they are relatively cheap to buy (compared to wustof, scanpan etc), they are easy to sharpen and will last you a long time. i'm a chef and use these knives every day. i find they are very user-friendly, allowing for precision cuts (eg fine dice, slice). some other knives eg mundial, wustof etc, are very chunky and make thin slices hard to do.

the metal they use is not as hard as the wostof german steel, meaning they will require sharpening more regularly, however they are easier to sharpen due to the design, and faster to sharpen because the metal is softer. you wont need to sharpen them too often, using them at home. you can take them to your local butcher, kitchen shop (e.g. chef king, king of knives), or keycutting/locksmith place, and pay them to sharpen it for you. probably about $5-$10 to get done.

a chef knife will cost you about $60 depending on the size that you want. you might be able to get it cheaper in the half yearly sales. the paring knives are about $8.

i've used heaps of differnt knives over the years and find these to be the best.

Global knives. We have had ours for 10 years, and they are still going strong. We have a stone to sharpen them with.

oooo, Victorinox have been around for years! I really need something that can be sharpened. All the laser edge BS around is about as useful as boobs on a bull! My current ones are that blunt that I managed to tear the skin with the tip rather than cut it. It would have been a much nicer cut if the piece of **** was sharp (or I wouldn't have been wrestling with the piece of meat and cut myself to begin with)!

More suggestions welcome so I can sort of compare

Furi - and invest in a good knife sharpener (Diamond Fingers).

Try online for specials - I think Peter's of Kensington does them...

I love my Furi knives. I bought them at a mid-year myer sale.

Yep, I've got the Global Ikasu set here. I used to work in King of Knives, so I tried 'em all out and found the ones that were most comfortable for me. I woulda LOVED a Wusthof set, but only for the name, they're actually a bit heavy for me. We've had our Global's professionally sharpened once in 5 yrs, I generally sharpen them myself with a little ceramic sharpener. I really would recommend you go into a store and handle a few, because comfort differs person to person. A good rule is to look for the companies that offer a lifetime warranty - Global, Victorinox, Furi, Wusthof. That means they're confident they'll last a lifetime, and you'll generally find that if you hae a problem with any of their knives, they'll simply replace it, no messing around. Whereas 5, 10, 20 year warranties will be of lower quality.

I bought some Victorinox knives when I was in Switzerland about 6 years ago for my parents and they are just fantastic. Cost a pretty penny but Mum said she still hasn't had to sharpen them (though that doesn't mean Dad hasn't) and the steel never gets stains on it or anything. I miss living with them and being able to use those knives - I knew I should've bought some for myself!

Nobody does knives like the Swiss!

I've got 2 Dexter Russell Green River Butchers knives. They are AWESOME. My Dad routinely shows friends how he can shave his arm hairs with them :S lol
They are pretty cheap ranging around $25-30 depending on the size you want.
Really sharp. You have to make sure you wash and dry the blade quickly so it doesn't rust, but they are fantastic.
It's all I use.

Bit downmarket here, but I have a wiltshire knife block with 5 knives and a seperate sharpener and it hasn't missed a beat. You don't need to spend hundreds.

We bought the Global Synergy set, that is currently being used on Masterchef. Not that we picked them for that reason, but proves they must be good! My brother in law got the set last year. Sales right now are great, we got our 7 piece set (6 knives and a block) for $290, down from $450 rrp. Generally you can buy them online for around $300, and some give a free sharpener in the deal.

Me too!! They rock!

I use Mundials, I like a bolster on my knives, Victorinox don't have them. However, professional tip - a Victorinox pastry knife will be your best investment - use it for all basic veg chopping, bread as well as pastry. Will save your chef's knife and mean less sharpening in the long run ;)
You can grab a block at the moment from House stores for only $200 including a steel.

ETA: Please PLEASE do not take your knives to a key cutter to be sharpened - you need to take them to a proper kitchen shop that outsources its sharpening, or your local butcher if he is willing to do it for you.
