Anyone have a Apricot Chicken Recipe....???

I have just found out that my very picky eater of a DH like apricot chicken....

I have googled recipes, but I was wondering if anyone has a tried and tested recipe :)

This is dead easy and my DS LOVES it

500g-1kg chicken depending on how many you are feeding (I use thighs)
Can Apricot Nectar
Packet of French Onion Soup Mix
Onion
Mushrooms
Carrots
Peas
Brown the onion and chicken, Pour in the mixed Soup Mix/Apricot Nectar
Add Mushrooms, Thinly slices carrots and frozen peas
Simmer for about 30 mins
Serve with Rice or Pasta

You can add any other vegies you like too. Sometimes I do it in the slow cooker if I am working (just chuck everything in), otherwise I do it in a pan on the stove top

Yummo, I love apricot chicken. But it has to be apricot chicken CURRY. Actually the continental packet mix is pretty good. I use it all the time. I just use chicken breast diced and I don't put the apricot halves in, just the juice.
