Our oven is broken, I have been without one since January and it is driving me a little batty... We don't want to buy a new one just yet so I am wondering if there are any bench top appliances that I can bake in slices, cookies, muffins etc.
Any suggestions?
I'm not sure that this is what you had in mind, but I love having a combined convection /microwave, which cooks the kind of things you mentioned beautifully. I especially like how quickly it preheats and how energy efficient it is when I'm doing just one tray of something. I bet you could pick one up for a good price from your local recycling centre, on gumtree, or even free from Freecycle.
Sunbeam have a mini bake and grill which apparently you can cook cakes in too (around $60) or they have a bigger one (for around $170).
We have the sunbeam bench top oven - the slightly bigger one that also does pizza.
We use it all the time and I have baked in it, although not big enough to do cupcakes but it can hald a standard cake tin perfectly. We bought ours as I found it much easier to use to cook dinner for the kids in than having to heat up the big oven and now I couldn't live without it.
After we got ours my mum & dad purchased one and my mum cooks everything in it. I don't think she has used her normal oven since she got the little one.

I assume it is the cupcake tray that doesn't fit in, I haven't used the silicone moulds before but this may be a way around it?
Yep that's the one.
I only have the cupcake trays but the silicone moulds would probably work, I pretty much use mine for 90% of our meals that need to be cooked in the oven :)
Did you know you can cook cakes etc in a slow cooker or even on the BBQ if you have one with a hood? My step mum bakes cakes in the BBQ and they're yum!
We have Kambrook one. Used it for years as we only had a cook top and no oven. Worked brilliantly. Cooked roasts, cakes, muffins, lasagne etc. I had a 6 hole muffin tin which fitted beautifully. Did awesome toasties as well.
