Pre-shred it and freeze in portions.
We use it for: scrambled egg, quiche, pizza, fried rice, sandwiches/toasties, salads, pasta, stuffing for capsicums/mushrooms/pumpkin/zuchinni, fried with onions and beans for stuffed potatoes, savoury slices....
I made a pie with leftover ham, turkey, roast potatoes, peas, corn, carrot, gravy. I pretty much fried off an onion and then added everything to the pan. Then put it in a dish and topped with pie pastry.
There was enough for two pies and the kids devoured the first one.
Frittata.

oh freeze it! yes. I'm getting sick of ham (I know, sacrilege!)
I just threw mine plus bone into slow cooker and made pea and ham veggie soup
ah, soup is a great idea also. Unfortunately we have about 3kg of solid ham....
Someone in my fb feed chopped it up and made ham and cheese brioche.
hm. non-foodie had to google brioche. sounds good.
