Mine's pretty basic so I'm subbing for some ideas too!
I always find the yummiest is the most simple without Jazzing it up. Potato, cream, cheese, onion and bacon. I layer the ingredience pour cream on top followed by some tasty cheese and cook for about 2hrs longer if it's big for a family BBq
I do the same as mildez :) its the tastiest way Ive tried although I only put bacon and onion in the middlet hen layre potatoes on top and only put cheese on the top
for a lower fat version I mix a packet french onion soup with 1 1/2 cups milk and a tsp mustard and pour over sliced potatoes then sprinkle a small amount of reduced fat cheese on the top

Yum I love potato bake! I make mine chunky style rather than sliced. So just cube and boil the potato a little first. I chuck in the standard cooked bacon and shallots. As sauce I mix light sour cream, reduced fat Philly cooking cream and some vegeta stock powder. Cheese on top with a little more vegeta and bake til golden and bubbly.
The potato bake I make is made to taste with garlic, cooking cream and chicken stock powder, pepper and obviously potatoes. I soften the chunkily sliced potatoes for about 10mins, place into a dish and pour all the ingredients over the top. For added flavour I sprinkle with cheese! Bake for 45 mins and viola! Yummy!
I add sweet potato as well as normal potato just to jazz it up a bit :) well as jazzy as potato bake can be lol
