I used it for years when I did low carb. Mostly for muffins/biscuits and coating things. I found breads difficult because it absorbed so much liquid. I should make you some next time I make coconut milk. Coz I know it used to be exxy. But I didn't get it in bulk.
I have cooked with it - when I did paleo. I didn't like the taste or texture it gave baked goods, its very distinctive.
I bought a kilo the other day. Am planning on baking this weekend. A lot of recipes I've seen combine it with almond flour.
Yeah I found it had to be certain things. DH hated it. But he's texture funny. And not a fan of coconut. But there's heaps more recipes since it has become popular. Keep in mind too because it is a fibre like psyllium husks, which I used to use a lot of too, you need to make sure if you use it a lot you drink lots of water.
i have a bag that i havent used yet. the recipe i wanted to use it for was a banana bread or something but then it had nut butter in it so made it a school nono anyway
