I have some beef mince...

So, looking for dinner ideas... I have some fresh beef mince, plenty of fruit and veg and a well stocked pantry. I'm trying to avoid taking the kidlets to the supermarket - dragging three of them around usually results in a whole lot of unplanned purchases and a lot of frustration!!

I'm looking for something different to spaghetti bolognese and no one else in the house will eat cottage pie (which I love!). If anyone has a great recipe for spaghetti meatballs I'd like to try that, have never made it before and at least it's slightly different to bolognese!

Hit me with your best mince recipes!

My boys love meatballs.
I find that some breadcrumbs stops them from being dry.
I don't really follow a recipe.
Just beef, egg, garlic, salt, pepper, herbs and breadcrumbs mushed up together. If I have veges that I can grate into them I add them (carrot, onion, zucchini are all good).
I prefer the taste if the meatballs are browned on the outside before cooking but you could skip that. I cook them in a basic tomato sauce. Tomato, onion, garlic, herbs, grated veges optional. Either in the slow cooker or the oven.
Serve them with greek yogurt over the top.

How about chilli con carne with rice? It doesn't have to be too chilli.

My mum makes the meatballs (similar to Zazou) and uses a tin of condensed tomato soup for the sauce (just add garlic and herbs). OMG it's sooooo yummy! Her hint is to add the cooked spaghetti to the sauce and let it simmer for a bit to soak in some of that yumminess.

For something different, I cooked the meatloaf on the front of the Superfood ideas mag - it's just a meatloaf with mashed potato on top. Sort of like a cottage pie/meatloaf combo.

My meatballs recipe is pretty much the same as Zazou's, but I always add the grated veg to the sauce, not the meatballs. My other mince based 'go to' dinners are burgers, mince pies, lasagne, tacos, fajitas, curried mince and veg... depends what's in the store cupboard and how much time you have. :)

ETA, oh yeah, and meatloaf!

Korean beef using the mince is amazing. And the kids devour it every time!

We use mince for tacos, meatballs (Swedish meatballs are the bomb if you have some cream!!) recipe on taste website!, I make up the recipe for meatballs, basically adding egg and breadcrumbs to hold them together, then add whatever grated veggies we feel like plus some seasoning salt, dash of soy, dash of tomato sauce and I cook the onion I put in it first so it's nice and soft!

We love swedish meatballs, and a random tip: Always add a tablespoon of cranberry sauce to your Swedish meatball sauce and it will taste more like ikea ;)

Rouge, any chance you could share your Korean mince recipe?

Cheers, Rouge - that looks delish, and I'm pretty sure DP would inhale something made with a soy sauce and brown sugar sauce!

You can also make some pretty good meatballs by mixing in a can of blended chickpeas. Add some Moroccan spices,server with salad, flat bread and a yoghurt sauce.

I do cheesy bacon meatballs. DH loves them.

Fry diced bacon until well browned, then mix in with mince, egg, garlic, herbs and heaps of mozzarella. Brown the meatballs and add whatever tomato sauce you normally use. Good with pasta :)

And koftas! We do them all the time. Have with Turkish pilaf and salad.

Thank you for the suggestions ladies! I have made meatballs for spaghetti and meatballs. In the balls I put mince, grated carrot, onion, finely diced capsicum, oregano (from the garden), breadcrumbs and egg. I pan fried them as per someone's suggestion! I made a sauce with blitzed cherry tomatoes (needed to be used), capsicum, garlic, oregano, salt and perpper (hello Manu!), a little bit of sugar, passata and red wine. It's all now simmering away in the slow cooker. How long should I let it simmer? If I do it for too long will my balls fall apart? Smells delicious! Thanks, again!
