I wouldn't, especially as the main ingredient is rice, which is prone to bacteria. We love risotto in our house, and I insist that any leftovers are eaten the next day, or it gets thrown out.
I have had Gastro from rice eaten from the fridge the next day (ie within 18 hrs).
I won't keep rice at all.
It depends on a lot of things. Did you leave it in the pot at room temp for a period of time before refrigeration etc.
Next day is usually fine unless it's frozen immediately. Anything past that is a no no.
Vegetables and rice cause more food poisoning than meat. People often think vegetable = good. Not always so.
Thanks ladies! I didn't know rice causes more bacteria than meat!! Holy cow, I thought rice was harmless :redface:. Just as well, I gave 2 or 3 little spoons to DS and he said he had enough. I had a little bit myself and my stomach was a bit funny for a little while, could have been that. Next time, I'll throw it out the next day if it's not eaten (that's what I do normally do but just this time I had it in the fridge for a while longer that's why I asked, I'm glad I did!).
Rouge, I did leave it at room temp for 3 hours before it got put in the fridge as I cooked it before I went to work for DS and the OH.
