I've cooked a pork roast this afternoon forgetting that we had other plans so can't eat it. I'll pop it in the fridge overnight and do something with it tomorrow. What can I make with it? Maybe pie filling? Soup?

Take the rind off, wrap in foil and reheat tomorrow.
Keep the rind in an airtight container and use cold.
It is also great for sandwiches or eaten as cold meat

Oh I managed to pick off most of the crackling before it went in the fridge lol yummy. So just the meat left.
Diced pork is good in fried rice
Not really much help here but I just wanted to say how annoying for you - all the thought and preparation for a roast and it has to go in the fridge! I'd be eating it the next day, warm or cold, yummy! We did a massive roast pork recently and had leftover pork for a few days after. DH ate it cold but I prefered it warm.
Try making pork buns or put it in a risotto

It is annoying OP but we do have the same engagement every Wednesday so it really was a brain fart on my part.

Fried rice and wraps here with our left over roast pork.
I ended up doing a soup with loads of veges, rice and pork and it's amazing. Yum! So does this soup have to be eaten tonight only then? Since the meat has already been cooled and reheated once iykwim?
I usually do fritters.

I just did pork fried rice yesterday, threw the pork in the blended then cooked it through at the end :)
