Healthy Lunch Ideas
Hi Lovelies,
I'm looking for some inspiration. I need some fresh ideas for a healthy lunch - I'm so incredibly over garden salads and fruit salads. I'm allergic to olives and not a huge fan of "raw" cheese (prefer it melted). Any ideas would be heaven! Feel free to include things like salami as I'll use these after I have bubs as well....

Well, I'm just about to have a (vege) turkey sandwich with cucumber and lettuce... I had a huge lettuce craving at the shops yesterday! You could do that with pasta and melt cheese over the top if you liked. That should also sort out my salt cravings for the day as I always put salt on the turkey sandwich.
I love finding summer salad recipes in cookbooks, reducing to half a portion and adding pasta to them. Just trying to think of what else to suggest as I'm being quite unimaginative at the moment and living on vege-turkey sandwiches!

Can you make sushi rolls? They are quite easy once you have the right ingredients and a rolling mat - just get a sushi recipie book with step by step, illustrated insructions and you can't go wrong.
How about some leb bread spread with hommus and rolled around some chicken (or other meat) and a bit of lettuce, tomatoe, cucumber (or whatever tickles your fancy).

an omlette with mushrooms, tomatoe and some melted cheese on it
make extra the night before and eat leftovers
roast vege salad

Or pita bread stuffed with tomato, grated cheese and mushrooms and toasted under the grill or in the oven? I have been having ham and avocado sandwiches lately and they are yummy.

You could have a small baked potato with coleslaw and just the tiniest dab of lite sour cream!
My dietician has given me these as healthy lunch choices as well: Baked beans (!! anyway you can) with a piece of toast, or a small can of chunky soup and a filled roll. I sometimes steam some veggies (celery onion peas and corn) and add an instant chicken noodle soup and you get a nice, satisfying chicken soup that way.
A variation the salad theme is to roast up some chunky veggies, (sweet potato, king of nutrition, capsicum, zucchini, whole mushrooms, eggplant, etc) and then add a sachet of Ainslie's flavoured couscous and maybe some chickpeas from a can. You can reheat or have it cold.

I like avocado, shredded cheese, spanish onion and tuna, mashed to gether, and then grilled on crusty bread. YUM-O

They sound yummy girls! I think I might have some leb bread today!!!! Yummo! LOL - I used to do left overs for me but DH always takes it before I can pack my lunch! Tee hee. Omlettes - yum! I've had an egg craving lately.....

our caterer at work used to do nori rolls instead of regular sandwiches, using rice-paper and putting the salad stuff into that and rolling it up - a variation on the lebanese bread/pitta bread.
What I do is if I've made something for dinner like tacos I make more of the mince than we need and make a taco salad out of it - you could even make nachos at work with it, just take in some salsa (if you can eat it), avocado, beans (if you can eat them - not too sure how they'd help with wind), the mince, corn chips & cheese & then nuke them at work.
