Super Easy Potato Bake!
My mother in law gave me this recipe and I have shared it with just about everyone I know so I thought I would let you lovely ladies in on it as well.
Ingredients:
Cubed, cooked potato. I normally do around 8 medium potatoes and cut them up like you do with potato salad
1 packet of Cream of Chicken Soup (the powdered kind)
600ml bottle of cream (yes, not the best recipe for the waistline!!)
Place the potatoes into and medium baking dish. Whisk together the cream and soup and pour over the top. I sometimes add some mustard when I whisk it together as well. Cook in a moderate oven until it goes brown on the top. It is so yummy!! Tastes like it has cheese in it but no cheese in sight.

My gf does french onion soup mix and half cream half milk :) I love these... I do it the old fashioned way with garlic, salt & pepper and cream... thats all...
I love trying new potato bakes! Thank you for the recipe!

Yum - Anita that's an excellent idea. I bet you could use evaporated milk instead of cream and it would still be delic but better for those of us who are *"Slimming"*
:-)
