I have got a fantastic banana bread recipe that is really easy and so yummy - i made it again this week! Need to go to my bub, but will come back and post it for you when I get time.
Also have a delicious, but slighty more time-consuming cake recipe if you would like it.
Banana Bread
1&3/4 cups of SR flour
1/4 cup of Plain flour
1 tsp ground cinnamon
2/3 cup, firmly packed, brown sugar
1/2 cup skim milk
2 eggs, lightly whisked
50g butter, melted, cooled
2 overripe medium bananas, mashed
Preheat oven to 180C. Grease a loaf tin and line the base and two opposite long sides with baking paper. Sift flours and cinnamon into a bowl, stir in sugar, make a well in the centre. Combine milk, egg, butter and banana in a bowl, then add to the flour mixture and sitr until just combined. Pour into tin and bake for 40-50 minutes, check with a skewer if you like. I prefer this to be slightly underdone rather than overdone IYKWIM? Let cool in tin for a few minutes before cooling on a wire rack. It's very yummy still warm from the oven!
I love this recipe, it is so yummy! It's very nice with a little butter spread on one side.........
Yum - thanks heaps. I am about to give it a go! DS1 is helping which always makes for an interesting experience LOL!
It is cooking as we speak - smells delicious!
Hope you think it tastes just as good! :)
Mmmmmm - we are eating it at the moment and it is divine - especially good with butter! Thanks for a great recipe!!
So glad you like it! Apparently it's not too fattening which is always a good thing!
Ohhh FANTASTIC girls, I was just wondering about a banana bread recipe the other day, for when the bananas start to get a little too ripe! Hurrah for you! :D
Dachlostar linked to this the other day so I thought I'd try it. We had a flop the first time, the edges were cooked but the middle gooey (the cooked parts were delish though!) so I have another one cooking now :)
:bump:
We loooove this recipe & have another batch going in the oven now :D
I was just looking for a banana bread recipe as I had 2 over ripe bananas and didn't want to waste them and found this recipe, and it turned out fantastic!!! Light and very tasty! Just finished off a piece hot from the oven with butter, yummmm! Nice to hear it's not too fattening either!
I want to make this!!
But I dont have a loaf tin, can I use a round tin??
I loooooooove banana cake/bread. My SIL made me a banana cake for my birthday last year and oh my god it was so delicious!!
Well I just put it in the oven
But then it was in there for 5 mins and I realised I forgot to put the sugar in it :(
so I scrambled to quickly stir it in :( I'll let you know how it turns out
there is a great recipe on orangette food blog with cinnamon-crumble topping. i make it all the time!
My Mum makes an amazing banana bread using either yoghurt or sour cream...I can't remember which.
I'll call her today at a more reasonable hour and post it on here. I totally agree with the butter thing, too. Banana bread, still warm from the oven, and a smear of butter. Heaven :D
