Either side out is fine Tanya. BBB booster have the fleece out but Itti Bitti Bamboos have the knit side out and they both work beautifully.
I cut them out 30cm x 12cm and then there is enough for a seam allowance. Maybe make up one to see if you're comfortable with that size :)
