recipe for stuffed veges?

Hey guys,
I am looking for an easy and delicious stuffed vegie filling. I want to fill eggplant, zucchini and capsicum...maybe tomato too!

I would like a mince meat recipe as well as one without.

hope someone can help :D

Danni - I normally do up a nice spicy fried rice and stuff that into capsicums and baby eggplants. It's just your average fried rice recipe and some chilli sauce mixed in and some paprika!! YUMMM!!!!!!
