White Chocolate & Passionfruit Mousse
Ok I had all the ingredients to this mousse... that is how unbelievably easy this is! I am so getting brownie points tonight... Passionfruit is Marc's fave ;)
Now I halved the recipe and was able to make 2 big scotch glassfuls and 2 half small glassful's (for the kids). I also omitted the raspberries as I didn't have any but they aren't necessary :)
300gms white chocolate
6 eggs seperated
10 passionfruit (or 2-3 tins - I did one tin for half the recipe)
400g of fresh raspberries (I omitted this from the recipe)
Melt the white choc in the microwave, set aside to cool.
Whisk the whites till you get wet firm peaks (so its solid but still slippery).
Add the egg yolks to the choc and stir vigorously. Then stir in the pulp into the choc mix. Then carefully fold in the whites in 3 lots. Thats it. Divide the raspberries between 8-10 glasses and pour mousse into glasses and allow to set for a few hours in the fridge. You could also garnish with fresh raspberries if you prefer instead of having them at the bottom of the glass.
