I found this recipe on the ABC web site ... have made it a few times and its lovely!
Grandma Berg's banana cake
Chef:Louise Ray
This banana cake really works – unlike other banana cakes I’ve known, it doesn’t go flat and have the texture of rubber thongs.
Degree of difficulty: Low
Preparation Time: 1 hr inlcuding baking time.
You need:
3 teaspoons lemon juice
2/3 cup milk
2 & 1/3 cups SR flour
1 & 1/3 cup sugar
1 teaspoon bi carb soda
180g butter (melted)
2/3 cup mashed banana (2 very ripe)
2 eggs
2/3 cup chopped walnuts (optional)
Method:
Add lemon juice to milk and let thicken a little.
Sift flour into bowl, add sugar, soda, butter, bananas, milk and eggs.
Mix well BY HAND DO NOT put in a blender or mix master.
Add the nuts.
Bake in a deep greased tin for 45 minutes or so (might take a bit longer) at 180 degrees.
Top with cinnamon.
Serving Suggestion: Great for morning or afternoon tea.

Just mash it up and chuck it into your best pikelet recipe - banana pikelets, yum!
actually choc banana pancakes are excellent (and as a general rule I'm not into banans in cooking) but the rich choc and sweet banana seem to counteract each other nicely.

Cut them in half stick an icey-pole stick in them wrap in glad wrap and freeze. Eat frozen. :D
