Yummy Cupcakes

I made some yummy cupcakes last night. Here's the recipe.

Ingredients
1 cup SR flour, sifted (or whisked)
1/3 - 1/2 cup sugar
75g butter, melted & cooled
100ml milk
1 egg lightly beaten
1/2tsp vanilla extract

Method
1. Preheat oven to 190 degrees
2. Combine flour & sugar in bowl, make a well in the centre.
3. Using a fork beat butter, milk, egg & vanilla. Pour into the well. Stir gently with a metal spoon. 2/3 fill paper cases with mixture. Bake 12-15 mins swapping trays after 8 mins.
Makes approx 12

For the icing I used pure icing sugar & instead of water used milk. Making it really thick & coloured it pink. The sprinkled some cachous on top.

Mmm these sound good. I migh add them to the list for baking day next weekend!
