Who has a good recipe? I made one a few months ago that wasn't great, so I need a new recipe :)
This is my fave recipe :)
We have it with Chili Con Carne :D:
Sweet Cornbread
1 cup plain flour
1-cu p polenta
5 tablespoons sugar
2 teaspoons baking powder
?-teaspoo n salt
1-cu p milk
⅓-cu p canola oil
1 large egg, slightly beaten
Preheat oven to 200 C. Lightly grease 20cm square pan.
Sift dry ingredients into mixing bowl. Form a well in the mixture and add the milk, oil, and egg. Stir just until everything is combined – there should still be scattered clumps of flour, about the size of baby peas or BBs.
Pour the batter into the prepared pan and bake for 24 to 30 minutes, until the cornbread is starting to brown slightly (especially at the edges) and a knife inserted in the middle comes out clean.
If you can get cornmeal (imported from the US) as opposed to polenta, it will come out slightly differently and equally as yum!
Thanks Sarah for this thread you have just reminded me I have a kilo of cornmeal to use up!
Kind of delayed, but it's in the oven now :) And I'm doing chilli con carne for dinner to go with it!
