Chicken & Veg Lasagne
Serves 4-6
Ingredients
1 tbsp olive oil
1-2 cloves garlic
2 skinless chicken breast cubed
500g frozen veg
420g can cream of chicken soup
1/4 cup fresh basil leaves
250g packet instant lasagne sheets
1 1/2 cups grated cheddar & mozzarella cheese
Method
1, Heat oil in large saucepan, saute garlic for 2 min. Add chicken & cook until browned, add vegies & cook for 3min.
2, Add soup & half basil to pan, stir well
3, Brush lasagne sheets with hot water, layer 1/3 of sheets in greased 6 cup capacity ovenproof dish.
4, Spread soup over sheets,then chicken mix, sprinkle on 1/3 cheese. Repeat layers finishing with lasagne & sprinkle over cheese.
5, Bake at 180 degrees 25-30min, cover with foil last 5-10 min to stop cheese burning
