Has anyone a recipe for strogonoff with evap (lite) milk? I don't have any yogurt or sour cream in the house but I do have 3 tins of evap milk.

I've made this before and its delish and low fat too :) Its actually my fave start from scratch strog recipe.
Chicken Stroganoff (can be beef or veal) From Annette Syms "Symply to good to be true 2"
600g skinless chicken breast
1 cup sliced onion
3 cups sliced mushroom
1 x 375ml can evaporated light milk
2 level teaspoons of beef stock powder
2 level teaspoons of tomato paste
1 level teaspoon of paprika
2 gherkins finely chopped
1 level teaspoon crushed garlic
1 level teaspoon cornflour
salt & pepper to taste
Coat a large non-stick fry pan with cooking spray, add garlic and chicken strips, toss together until browned. Add onion to pan and cook for 2 minutes, place mushrooms into pan and cook a further 2 minutes. Add gherkins, stock powder, tomato paste, paprika and stir well. Blend cornflour into milk, add to pan stirring continuously until sauce boils, salt and pepper to taste.
This can be made with beef or veal.
