Hello,
I seem to be cooking the same old things for my toddler and was wondering if you had any easy to prepare meal ideas. My DS has an egg allergy so that rules out scrambled eggs. Thanks for any input!

My bub is a fiar bit younger but he is a good eater - here are some ideas of quick meals i make for him that he loves (without eggs)...
1. portobello mushroom with garlic and butter - just chop and pan fry
2. haloumi cheese - dip in flour and pan fry
3. baked beans
4. cubes of roast vegies
5. salmon patties - i make these and freeze them
6. Thai chicken patties - make and freeze
7. pasta with cheese sauce - i freeze sauce in portions
8. grilled cheese on toast
9. english muffins with toppings - avocado, cream cheese, vegemite etc
10. cubes of tofu grilled or fried
11. polenta with tomato sauce
12 gnocchi with sauce
hope that helps
I do the salmon patties for the freezer too, and load them up with vegies so they're a meal in themselves.
Spaghetti bolognaise is a big hit with Izzy now and I freeze portion sizes for her. Also, a lamb casserole that I've been doing is a big winner - brown some diced lamb, then throw in diced potatoes, celery, carrot and a tin of tomatoes together with some stock or water. I usually throw in whatever herbs I have around and then slow cook it for a couple of hours. Then throw in some peas, corn kernels etc, cook for another few minutes and bingo. Izzy LOVES it and it is brilliant to make a batch for the family, and freeze a dozen or so little plastic containers for later.
Here are some easy things that DD loves:
Fried rice
Soups - pumpkin & sweet potato, cauliflower and broccoli, minestrone
Wholemeal pikelets - I add grated vegies or fruit
Pasta with tomato based sauce and grated vegies
Shepherds pie
Steamed vegies
Rissotto
tuna mornay!!
Pasta is a good one - especially shapes like spirals or penne. Also chips - they are easy to make, just slice up potato into wedges or sticks and bake in the oven with a bit of olive oil, or oil spray. Toasted sandwiches, salad plate with corn (baby or kernels), grated carrot, cheese, tomato, capsicum etc. Steak cut into little strips, chipolata sausages, chicken nuggets (again easy to make - roll little pieces of chicken breast in milk and breadcrumbs or cornflake crumbs and bake).....
