I use my Mum's and it's sooo easy....
500gms Mince Beef ( not the best quality, but not the worst... )
2 Eggs
2 Carrots peeled & grated
2 Medium Potatoes peeled & grated ( include the 'juice' in with the mix, it helps it bind )
1 Small Sweet potato or pumpkin peeled & grated
1 Medium onion
Lots of salt & pepper
Big squirt of Tomato sauce
Mix it all up together using hands, so lovely and messy!
Defrost 6 sheets of Puff Pastry and lay on a flat surface, I use my kitchen bench.
Pile mixture in the middle of the sheet to form a log shape, leaving enough room to fold the puff pastry over the top like wrapping a present, and then fold the ends over and press down with your fingers to seat it in. Make four little cuts in the top of the pastry to let the steam out and then brush with egg yolk all over the top.
Bake for 30 - 45 mins in a pre heated 180 degree oven until the pastry is nice and brown.
Makes 6 BIG log pasties that you then cut into whatever size you want or you can cut your puff pastry into triangles and make them into pastie shapes. I always find that it ends up being too much pastry and not enough filling that way.

250g pastry
-- 125g nutalex
-- 1 cup flour
Rub nutalex into flour, add a pinch of salt and enough cold water to bind together.
Rest for 20 minutes in refrigerator before use.
1 onion
1 carrot
1 small sweet potato
2 medium potatoes
125g French beans or peas (frozen or fresh)
1/2 tsp ginger
1/2 tsp chilli
1/4 tsp turmeric
1/2 tsp ground cumin
1 tsp coriander
1/4 tsp mustard powder
salt and pepper
Preheat oven to 200 C. Cut up the carrot, sweet potatoes & potatoes into chunks and boil for around 15 minutes until fairly soft. Dice them.
While they are cooking, make the pastry.
Chop and fry the onion and add ginger, chilli, turmeric, ground cumin, coriander, mustard powder, salt and pepper. Add the veggies and season to taste with salt and pepper. Cook gently for 4-5 minutes. Allow to cool.
Roll the pastry into 4 large circles or smaller ones as desired. Place filling into centre of pastry and fold into a pasty. Brush with soya milk and make a small vent in each one. Bake for 20-30 minutes. Yummy!
I vary this with whatever veggies I have on hand, throw in celery, peas, parsnip, corn swede, even beetroot sometimes if the cupboard is a bit bare!
Edit: I should have noted the nutalex and soy milk are due to no dairy in this house, so you can use normal butter/margarine & milk if you prefer ;)
