Can it be frozen??
I was just wondering if, when I cook a risotto, it can be frozen? I was going to make one but it turns out my DH doesn't eat it (doesn't like how it looks :S) so if I can freeze it I will go ahead and cook it and put it in the freezer for bubs and I when dad is at work. I was going to cook one that contains chicken mince and mushrooms

I freeze mine - just reheat it slowly.

hmmm... rice is something that can you should eat straight away as after it is cooked it grows bacteria at a rapid rate.
This article is from the Food Standards Agency Australia:
"Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.
So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.
It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.
Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once."
SO if you freeze it quickly after cooking it should be okay but only reheat once. Hope that helps

i always freeze left over risotto for DD. ;)
If my DH wouldn't eat something i cooked b/c he didn't like the look of it, i'd tell him to cook his own! cheeky! lol

in frozze some for first time a few weeks ago but havent reheated it yet. How do people suggest doing it in microwave completely or enought to thaw it a bit and then in pan??

I defrost in microwave, give it a good stir, then reheat it in microwave in 1min bursts, stirring between each burst until its hot.
