Last night I made a delicious sauce, and you know it's easy because I don't do hard stuff!
I fried a clove of garlic (okay, a teaspoon of crushed garlic), some diced bacon (you could use bacon strips or prosciutto), and then added a tin of diced tomatoes, about 1/2 teaspoon of chilli flakes, a little pepper and salt (prob didn't need the salt), and reduced the sauce! So easy and yum!
I surprised myself, I was expecting my usual average cooking, and couldn't stop saying how good it was! :rofl:
for home made with tomatoes
heat oil in a wok, fry up some onion and garlic, if I'm using dried herbs I usually add some in now, throw in some diced tomatoes (make sure they're juicy ones - even a bit towards the riper stage) and then I saute. You can add some tomato paste if you want. if I'm using fresh herbs they go in near the end.
I don't eat pasta sauce that is too watery as I usually toss my pasta through the sauce with olive oil & butter.
for homemade tomato sauce..
Peel your tomatoes (core them and put a small X ont he bottom to score the skin, pop them in boiling water for about 20 seconds, remove and the skin should just peel off)
You can seed them if you want, I dont bother
Put them all in the pot with water and herbs or whole garlic cloves if you like
Boil, then simmer for as long as you like basically.
Puree and you can pass it through a seive if you like really smooth sauce.
Bottle, put oil on the top to make it last a little longer once on the bottle.
Yum!
