As if it were beef. So if it's a tougher cut then cook it slow and long and if it's a tender cut cook it slow and not long - it's like beef, it doesn't like to be overdone. I make stew with it usually (we never buy steaks, too expensive, only ever get that off roadkill). Just a normal beef stew but with venison.

Venison goes well with chocolate, so you could make a chocolate sauce. Will see if I can get DH to tell me the recipe he used.

Venison with chocolate is good, I've got a nice recipe that used Juniper berries and mustard around somewhere.
What cut of venison do you have to work with?
The key thing is to remember that venison tends to be very lean, so you have to cook it carefully to avoid drying it out.
