Hi All
It's coming up to DS's 1st birthday party and I'd like to make him a little cake that he can eat without me feeling too guilty about it.
Has anyone got a good recipe?
I'm going to assume he's not allergic to egg (I'll try him on it before the party of course) but if you have any egg-free recipes I'll try that too.

I made a carrot cake... i actually mae it twice and as far as B'day cakes go it was a total hit, i woas worried that the older kids wouldnt go for it, but it was gone in seconds...

I second the carrot cake! Yum!
Cake:
4 eggs
2 tsp. baking powder
1/2-1 cup sugar
1 cup pecans, chopped (Replace with Saltanas and use only 1/2 cup of sugar)
4 cups grated carrots
1 cup vegetable oil
2 cup flour
2 tsp. baking soda
2 tsp. cinnamon
Cream Cheese Icing:
butter, softened
cream cheese, softened
(I just went by taste and consistancy... add as much or as little of each as you like)
Vanilla extract - 1 drop - i dint use it thou
Cake Directions:
1. Combine sugar, baking powder, flour, cinnamon and baking soda in a bowl. Add in the eggs and oil.
2. Mix until just blended and then add the carrots and pecans.
3. Bake at 180-220C for 35 to 40 minutes or until done.
Frosting Directions:
1. Mix cream cheese and butter until smooth, add vanilla and blend well. Spread on cooled cake.
Thats it!
I made Molly Janes in the shape of a butterfly and coloured the icing purple....
I also decorated with fresh fruit for her actual birthday and lollies for the party.
YUM my mouth is watering. Guess I'll have to do a trial run ;)
